Edit Answer (for another 13 minutes) This is best done in the authoring file. Use the desired fonts there. Ensure that the output PDF has these fonts embedded.. Alternatively you can use Acrobat XI Pro's edit tools to select characters and, in the preferences, change the fonts. Note that to do this the fonts need to be available on the system.
